You'll now find him hosting dinners, writing recipes and at the helm of How I Cook, a weekly newsletter giving keen home chef's a guide to tips, seasonal home cooking and culture recs.

With backgrounds in street food and a love of big flavours - Nick and Tessa started The Black Pig in 2019 with a single goal to make the best sandwich around. Based at Borough Market, they are champions of the slow food movement and source ingredients accordingly. Pulling BBQ influence from Nick’s time in the southern states and time scouring NYC for the best subs on offer, the sandwiches deliver a balanced bite with unique flavours.

The Bodega is a New York inspired Sandwich shop based on Norwich Market. Run by Chef Edd Watkinson it offers a variety of different sandwiches with flavour combinations from around the world. The Bodega has been open for a little under 2 years now and has expanded into pop ups in other local businesses and at events. In 2023 The Bodega won best newcomer in The East of England Food & Drink awards.

Deeney's

DEENEY'S

Deeney’s was born in an East London market stall back in 2012 and thrives under the husband and wife team, Patrick and Carol. The inspiration for Deeney’s grew organically from a proud Scottish heritage and the nostalgia of Carol Deeney's childhood spent in her mother’s cafe in the northeast of Scotland.

 

Today Deeney's have locations in Leyton, Walthamstow, Thailand and Japan. They’ve stayed true to our roots and still maintain our Saturday market stall on Broadway Market.

Happy Endings

HAPPY ENDINGS

Terri Mercieca is an ice cream maker, chocolatier, dessert chef and the founder of Happy Endings LDN, a dessert business made famous by their signature ice-cream sandwich. As a chef, desserts have always been Terri’s thing. 

 

In 2014, she put down roots in London and founded Happy Endings LDN – since then, she has won the YBF Baking Award and been nominated for CODE Hospitality’s Most Influential Women in Food 2023. She also regularly contributes dessert recipes to food magazines and appears on TV, most recently MasterChef Youth.

Liam Barker

LIAM BARKER

Liam Barker began his culinary career at London’s Corrigan’s Mayfair, known for their bold flavors and refined riffs on traditional British cooking. Upon departing Corrigan’s, Liam started his own Caribbean food pop-up concept showcasing his food, heavily influenced by Trinidad & Tobago, Barbados and the Colombian coast, across London and Stockholm. He manages this as well as his brand @chef.liam, and his latest project 'food education' on youtube where his goal is to teach how we can all be more sustainable in our use of food, as well as bridge the gap in food education.

Mondo Sando began with Jack and Viggo, two best pals who started slinging subs to those in the know in SE5 over the pandemic. By April 2021 they were based out of Camberwell’s Grove House Tavern, and now they’re opening their own cafe. The food is always changing but the goal remains the same - stacked sandos made with eclectic ingredients, bold flavours and a big hit of creativity.

Picnic Deli was born in early 2023, in Margate’s up & coming Cliftonville neighbourhood. Owners Rose & Magnus handpick the selection of cheeses & provisions, wines and beers, while the compact kitchen knocks out freshly-baked bread and pastry goods every day. It’s the sandwiches, however, that are really getting people talking. We’ve lost count of the number of people who've said we've fed them the best sandwich of their life.

Nestled next door to our restaurant Rogues, our charming little conservatory, home to our wood fire sandwich shop has taken hold of Hackney Road. Alongside our Head Chef Alex we have crafted the perfect pairing by combining our signature chewy, charred, wood-fired rolls with the finest seasonal British and European produce, artisan charcuterie, and wood-fire roasted joints. We bake all of our bread in-house, every day, using our wood fire oven. Made with regeneratively farmed British and French flour from Wildfarmed and a certified MSC mix of British Wood, our bread boasts a chewy, airy texture with a delicate, crisp, charred crust.

RUBEN'S REUBENS

Ruben Dawnay rose from the lockdown ashes by setting out to smoke meats and home-cured fish from the garden of his parents' Brixton abode. Paying homage to his Polish-Jewish heritage, Ruben’s Reubens was born. Since then, Ruben has been recognised by CODE Hospitality as one of their 30 under 30 rising stars to watch, dominated several pop-ups across the city, mastered the meal kits trend and slung tacos at Meatopia 2022 and for Delli.Market.

Freddie Janssen decided to make her passion for food full-time and took on a role as marketing and PR manager for World’s 50 Best restaurant Lyle’s, working alongside chef founder James Lowe and his business partner John Ogier. After five years with Lyle’s, Freddie made the leap to pursue her own solo venture, launching a successful crowdfunding campaign in order to open her first bricks and mortar site, Snackbar, in August 2019.

Lil' Wong Bakes began in 2019, a micro-bakery based in Dalston, East London. Sam Wong (Baker, Owner) is pandan-obsessed and best known for her Pandan Sandos: chiffon sponge sandwich cakes filled with whipped cream and seasonal fruit. Lil' Wong Bakes is a bakehouse that is made up of unique flavours and pulls inspiration from East and South East Asian desserts. Sam believes and lives by the saying that 'There is a separate stomach for sweet things'.

Cooking and raving. Raving and cooking. Partying and pushing to make his dreams come true. Brad Carter’s story ain’t your regular chef story. But then…he ain’t your regular chef. Brad created a brand called One Star Döner Bar, high end Berlin style kebabs using the same ingredients he uses at the Michelin starred restaurant in a more accessible form. Brad now remains a regular personality on television featuring on popular television shows like Saturday Kitchen Live on BBC One as well as live demonstrations in front of eager crowds at national expositions such as The Good Food Show. PAULIE'S BAGELS

We are a husband and wife-run team taking inspiration from the bagel shops, delis, and bodegas of New York. We quickly gained a loyal following for our NYC classics like the Bacon, Egg & Cheese served on our delicious Everything bagels. In late 2023 we opened Paulie’s on Well Street to operate as our main bakery and production space. Our 100% sourdough bagels are hand-rolled, boiled and baked fresh here every day, 7 days a week. It is now a busy high street bakery and supplies bagels to a steady stream of locals as well as our original site in Netil Market that is still going strong.

After running Picky Bits as a catering service for six years, Danielle opened her Surrey sandwich shop, famous for their doorstop sarnies and a weekly changing menu. 

Following a rollercoaster 18 months of opening, the shop now only opens on a monthly pop-up basis, giving the team time to focus on other cool projects! (like Sarnie Party!) Flying the flag for suburbia, Picky Bits is the only place in leafy Surrey to offer such an experience between two slices of bread. With no formal chef training, Danielle is having a blast putting a twist on a classic, or creating a weird and wonderful filling, sharing the journey on social media as she goes.

Ana and Meng formed TÄ€ TÄ€ Eatery in late 2015 after years spent working with Nuno Mendes, first at The Loft, then at Viajante, Corner Room and Chiltern Firehouse. In 2018 they introduced London’s cult dish the Iberian Katsu Sando which ultimately led to the launch of TÓU in the Summer of 2019. In October 2023, Ana and Meng launched Solis at Arcade Battersea with JKS Restaurants - London’s leading restaurant group. The concept was an immediate success and, shortly after in April 2024, the pair revived their iconic sando creation and re-launched solo project, TÓU, in Borough Market as a 6 month pop up.
